Crawfish & Ink – A Lasting Impression of Louisiana
Over 20 years ago, long before I fished with Dennis Tietje at Grosse Savanne Lodge, I was invited to a crawfish boil at his place on Toledo Bend. It was the first time I fished in Louisiana and the first time I ate the bugs, but I’ve done plenty of both since. In addition to Grosse Savanne and Toledo Bend, I’ve been to Lake Calcasieu, the Red River and Venice. If you’re a sportsman, it’s a paradise with a perfect amount of cayenne.
While the state’s basketball team is the Pelicans, and while gators, redfish and beignets are big draws, I truly believe that nothing exemplifies that part of the country more than the crawfish – spicy, bold and full of fight.
Apparently, I’m not the only one who feels that way. Some folks love crawfish so much, they’ve made them permanent -- tattooed tributes to the tastiest crustacean in the South. These artists have captured that spirit, whether or not they inked them in Louisiana:
